Ingredients
  • 1 cup dried mung beansoaked overnight/6 hours, drain and rinsed
  • 3 tbsp oilEVOO, avocado oil
  • 1 Onionchopped fine
  • 3 garlic clovescrushed
  • 1 carrot, chopped
  • 14ozcan diced tomatoes
  • 4cups water
  • 1 cup coconut milk
Spices
  • 1/2tsp Tumeric
  • 1/2tsp curry powder
  • 1/2tsp ground cumin
  • 1/2tsp ginger ground
  • 1/2tsp garam masala
  • 1/2tsp brown mustard seeds
  • pinch of cayenne pepper
  • 1tsp salt
  • pepperto taste
Instructions
  1. Heat oil in pot, add onions and garlic saute until onions are soft.
  2. Add carrots, and continue to stir for a few minutes.
  3. Add tomatoes, spices, salt and pepper and stir for another 5 minutes.
  4. Add water and mung beans.
  5. Boil and simmer for 20 minutes or until mung beans are tender.
  6. Add coconut milk, simmer for another 10 minutes.
  7. Enjoy!
