Ingredients
  • 1 cup dried mung bean soaked overnight/6 hours, drain and rinsed
  • 3 tbsp oil EVOO, avocado oil
  • 1 Onion chopped fine
  • 3 garlic cloves crushed
  • 1 carrot, chopped
  • 14oz can diced tomatoes
  • 4 cups water
  • 1 cup coconut milk
Spices
  • 1/2 tsp Tumeric
  • 1/2 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ginger ground
  • 1/2 tsp garam masala
  • 1/2 tsp brown mustard seeds
  • pinch of cayenne pepper
  • 1 tsp salt
  • pepper to taste

Instructions
  1. Heat oil in pot, add onions and garlic saute until onions are soft.
  2. Add carrots, and continue to stir for a few minutes.
  3. Add tomatoes, spices, salt and pepper and stir for another 5 minutes.
  4. Add water and mung beans.
  5. Boil and simmer for 20 minutes or until mung beans are tender.
  6. Add coconut milk, simmer for another 10 minutes.
  7. Enjoy!
