Ingredients
- 1 cup dried mung bean soaked overnight/6 hours, drain and rinsed
- 3 tbsp oil EVOO, avocado oil
- 1 Onion chopped fine
- 3 garlic cloves crushed
- 1 carrot, chopped
- 14oz can diced tomatoes
- 4 cups water
- 1 cup coconut milk
Spices
- 1/2 tsp Tumeric
- 1/2 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp ginger ground
- 1/2 tsp garam masala
- 1/2 tsp brown mustard seeds
- pinch of cayenne pepper
- 1 tsp salt
- pepper to taste

Instructions
- Heat oil in pot, add onions and garlic saute until onions are soft.
- Add carrots, and continue to stir for a few minutes.
- Add tomatoes, spices, salt and pepper and stir for another 5 minutes.
- Add water and mung beans.
- Boil and simmer for 20 minutes or until mung beans are tender.
- Add coconut milk, simmer for another 10 minutes.
