MEAL PREP: Turkey Meatballs

Ingredients
  

  • 2 lbs ground turkey
  • 1 large egg
  • 2 cloves garlic
  • 3/4 cup almond flour
  • 1/2 cup Onion diced
  • 1/2 cup fresh cilantro minced
  • salt to taste
  • 1-2 tbsp italian seasoning
  • 1 large sweet potatoes cubed
  • 2 zucchini sliced
  • 2 peppers diced
  • 2 tbsp avocado oil
  • feta cheese as topping
Avocado Sauce
  • 1 avocado
  • 1/4 cup unsweetened coconut yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 tsp salt
  • 3 tbsp water

Method
 

  1. Preheat the oven to 400 F and line two baking trays with parchment paper.
  2. To make the meatballs, add the ground turkey, egg, garlic, almond flour, onion, Italian seasoning, cilantro, salt, and pepper to a bowl. Mix thoroughly. Roll into meatballs and place onto one of the baking trays.
  3. Add small cubed sweet potatoes, zucchini and peppers to baking tray and cook for at least 20-25 minutes at 400 degrees, until you can fork the sweet potato.
  4. Cook meatballs at 400 degrees for 20 minutes
  5. In a blender cup, add all ingredients for avocado sauce. Add more water if needed. Pulse until combined and serve on the side!
  6. Portion out two servings with sweet potatoes, veggies and meatballs. Enjoy!
