MEAL PREP: Turkey Meatballs

  • 2 lbs ground turkey
  • 1 large egg
  • 2 cloves garlic
  • 3/4 cup almond flour
  • 1/2 cup Onion diced
  • 1/2 cup fresh cilantro minced
  • salt to taste
  • 1-2 tbsp italian seasoning
  • 1 large sweet potatoes cubed
  • 2 zucchini sliced
  • 2 peppers diced
  • 2 tbsp avocado oil
  • feta cheese as topping

Avocado Sauce

  • 1 avocado
  • 1/4 cup unsweetened coconut yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 tsp salt
  • 3 tbsp water


  • Preheat the oven to 400 F and line two baking trays with parchment paper.
  • To make the meatballs, add the ground turkey, egg, garlic, almond flour, onion, Italian seasoning, cilantro, salt, and pepper to a bowl. Mix thoroughly. Roll into meatballs and place onto one of the baking trays.
  • Add small cubed sweet potatoes, zucchini and peppers to baking tray and cook for at least 20-25 minutes at 400 degrees, until you can fork the sweet potato.
  • Cook meatballs at 400 degrees for 20 minutes
  • In a blender cup, add all ingredients for avocado sauce. Add more water if needed. Pulse until combined and serve on the side!
  • Portion out two servings with sweet potatoes, veggies and meatballs. Enjoy!
