MEAL PREP: Turkey Meatballs
Ingredients
- 2 lbs ground turkey
- 1 large egg
- 2 cloves garlic
- 3/4 cup almond flour
- 1/2 cup Onion diced
- 1/2 cup fresh cilantro minced
- salt to taste
- 1-2 tbsp italian seasoning
- 1 large sweet potatoes cubed
- 2 zucchini sliced
- 2 peppers diced
- 2 tbsp avocado oil
- feta cheese as topping
Avocado Sauce
- 1 avocado
- 1/4 cup unsweetened coconut yogurt
- 2 tbsp lemon juice
- 1 clove garlic
- 1/4 tsp salt
- 3 tbsp water
Instructions
- Preheat the oven to 400 F and line two baking trays with parchment paper.
- To make the meatballs, add the ground turkey, egg, garlic, almond flour, onion, Italian seasoning, cilantro, salt, and pepper to a bowl. Mix thoroughly. Roll into meatballs and place onto one of the baking trays.
- Add small cubed sweet potatoes, zucchini and peppers to baking tray and cook for at least 20-25 minutes at 400 degrees, until you can fork the sweet potato.
- Cook meatballs at 400 degrees for 20 minutes
- In a blender cup, add all ingredients for avocado sauce. Add more water if needed. Pulse until combined and serve on the side!
- Portion out two servings with sweet potatoes, veggies and meatballs. Enjoy!
