Instant Pot Paleo Turkey Chilli

Ingredients
  • 1 tbsp avocado oil
  • 1 large Oniondiced
  • 1small sweet pepperdiced
  • 3stalks celerydiced
  • 3medium Carrotsdiced
  • 1small sweet potatodiced
  • 2tbsp tomato paste
  • 4 cloves garlicminced
  • 2 pounds ground turkey
  • 1/2cup chickenbroth
  • 114.5oz diced tomatoesdrained
  • 1medium avocado
Spices
  • 3 tbsp chili powder
  • 1tbsp dried oregano
  • 1tbsp ground cumin
  • 1/4tsp cayenne powderoptional
  • sea salt and pepperto taste
Instructions
  1. Press saute button on Instant Pot and add avocado oil.
  2. As soon as oil has melted add onions, peppers, carrots, celery and sweet potatoes.
  3. Cook until veggies are soft, stirring frequently.
  4. Stir in tomato paste and minced garlic and cook until fragrant, about 30 seconds.
  5. Add ground turkey, and break up with spatula.
  6. When most of the ground turkey is no longer pink, stir in spices, salt, pepper, chilli powder, oregano, cumin and combine.
  7. Add drained diced tomatoes, chicken broth and stir everything together.
  8. Lock the lid, turn off saute function by pressing cancel. And cook on high pressure for 15 minutes.
  9. Once done, you can manually release pressure or let it naturally release.
  10. Top with avocado and serve!
